Baukje de Roos to co-lead Scotland Beyond Net Zero food theme

One of the The Rowett Institute's senior scientists has been chosen for an important new role helping Scotland meet ambitious environmental targets.

Scotland Beyond Net Zero brings together universities to work with local partners and the Scottish Government to address key challenges associated with the climate emergency.

Food is among SBNZ's priority themes for 2025 and Prof Baukje de Roos will take the lead in this crucial area alongside the University of Stirling's Rachel Norman.

They will work with the steering group and with academics across the member universities and beyond to build external partnerships and academic collaborations.

Prof de Roos is an internationally recognised nutrition scientist with over 25 years of experience in the design and delivery of dietary intervention studies.

Her current work focuses on the mapping of fish, crop, dairy, and meat supply chains and modelling transitions to more sustainable production and consumption. Her expertise in the area of diet and health has formed the basis of contracts and consultancies with large food companies, food levy boards, and the food and drink support sector.

Expressing delight at the new appointment, Professor de Roos says: "We will support Scotland’s universities’ efforts to develop and support ambitious and high-impact research, partnerships, and collaborative activities in the area of food, aiming to find just and innovative solutions for our climate and environment challenges as we transition towards achieving Net Zero.

"I am very much looking forward to working with Rachel Norman, Kate Symons, the Scotland Beyond Net Zero team, and key stakeholders and partners, in order to achieve successful outcomes for Scotland Beyond Net Zero."
