1. To make the base for the pie -use a scone cutter or glass to cut a round shape in a wrap or tortilla and press into a pastry case to form the base shape; use a smaller cutter to create the lid of the mince pie.
2. For the pie filling – mix together in a pan about 30g fruit mixture as you prefer, suggested as chopped up apples, pineapple, grapes, dried dates, dried apricots, stem ginger, glace cherries, nuts, add ground nutmeg, cinnamon, clove, mixed spice, add a splash of grape juice and simmer on stove for 2 minutes to soften the fruit
3. Assemble the pie – spoon the fruit mixture into the base and put tortilla lid on top – for a nice brown colour gently brush on an egg yolk wash with a sprinkle of cinnamon in top.
4. To cook the pies - bake for 12 minutes in the oven at around 180°C
